Continue to stir until the gravy has come back to a simmer and has thickened. Transfer to a bowl, cover, and set aside to cool.

Wash the saucepan and fill it three-quarters full with cold water. Add the potatoes and boil them for about 20 minutes until tender. Drain, tip back into the saucepan, and mash lightly with a potato masher. Add the butter and season with salt and pepper. Set aside.

Preheat the oven to 350°F. Spoon the cooled meat and gravy into the pastry crusts to a level just below the edge of the crust. Spoon the potatoes on top. Place the filled crusts on a cookie sheet, and transfer to the oven. Bake for about 30 minutes until piping hot. If the tops are not browned enough already, broil for 2–3 minutes under the broiler to crisp. Serve immediately.
